This apple oatmeal cookies recipe is really good for a semi-healthy dessert or for cookies to keep around the house that you can eat instead of downing Twinkies or something atrocious like that.

The brown sugar is essential to making these taste right, so make sure you don’t use white sugar instead.

This reminds me of the first time I decided that I was old enough to ride a horse by myself; no adult holding the lead rope. I was at my grandma’s house. I was seven. The steed that I chose for this rite of passage was named Henry, a 15 year old Appaloosa. Henry was supposed to be the tamest of the tame, the epitome of a child-friendly horse.

Without telling anyone, for the post-ride bravery points, I mounted old Henry boy and started with a lap around the house. I wanted everyone to see me doing this, so I made sure to pass by the big window a few times. But I didn’t look in; that would have been too approval-seeking-ish.

On the second pass, I walked Henry under the big willow tree. This move ended up costing me my dignity.

For some reason, in his mind, those thin, hanging branches ran down Henry’s back like the breath of a llama (Henry’s greatest fear).

Suddenly we were galloping, which caused my inner baby girl to come out. Instead of strutting by the window with the coolest look on my face that you have ever seen, I had a death clutch on the saddle horn with both hands, screaming for my dad.

As if the full speed gallop wasn’t enough, Henry decided that he needed to start bucking and rearing up on his back legs.

The story ends with me in the rose bush bleeding and sobbing, with snot and tears all over my face.

My grandpa’s advice was to quit being a sissy, get back on the horse, and run him up and down the field until he understood that “I was the boss.”

I admit, at seven years old, I was weak. Instead of doing what my grandpa said, I went inside and continued to cry while my grandma fed me apple oatmeal cookies.

Here’s the recipe:

Apple crisp oatmeal is a delicious way to make your oatmeal in the morning. This is an tasty variation of amish baked oatmeal. And I’m not talking about those apple and cinnamon flavored instant oatmeal packets. Even those taste pretty good… but home made apple crisp oatmeal will blow your mind. Sadly, my mom and my grandma never made this for me when I was younger, this is something I discovered when I started eating healthier.

This is pretty easy to make, and like I said, it’s really really good. Not to mention its a healthy version of apple crisp. Your kids will go nuts for it, unless they’re weird of course…

Apple Crisp Oatmeal Recipe

Ingredients:

3-4 Granny Smith apples peeled and thinly sliced… should be about 4 cups

1 tbsp lemon juice

3 tbsp sugar

1/3 cup flour

1 cup of oatmeal

1/2 cup brown sugar

1 tsp cinnamon, optional

1/2 tsp salt

1/2 cup melted butter

Instructions:

Combine the apples, lemon juice, and the sugar (not brown sugar) in a greased 9″ baking pan and mix them around together.

In a bowl, mix together everything else (now use the brown sugar).

Spread the crumbly oat mixture over the apples evenly in your pan.

Bake at 375 for 30-35 minutes until the apples are tender.

You can top this with whip cream, ice cream, or my personal (healthy) favorite… milk.

Enjoy

This Amish baked oatmeal recipe has been a staple since I started eating healthier and losing weight. It is super good; it tastes like an oatmeal cookie… one that is warm and a little gooey still. Back in the day, my mom would make this sometimes for me when I got back in from feeding the cows in the morning. It definitely wasn’t my favorite back then, so I would always dump a bunch of syrup or sugar on it.

For some reason my tastes have changed and I love this stuff just straight.

1 tsp baking powder

3/4 tsp salt

1 tsp vanilla extract

Directions:

This is probably the best oatmeal raisin cookies recipe that I have found. When I was a kid I remember not liking raisins in oatmeal cookies. But I also ate dirt and went to the bathroom in my pants.

My grandma used to make cookies that these remind me of, but hers were always hard and broke apart instead of pulling apart.

Ingredients play a part in whether your oatmeal cookies are hard or chewy, but the biggest thing is how long you cook them. I’ve found its always best to take your oatmeal cookies out of the oven just before it looks like they’re done.

They still cook for a minute or two until you actually get them off the cookie sheet, this way the final outcome should be perfect.

The Best Oatmeal Raisin Cookies Recipe

These banana oatmeal muffins are great for breakfast or a Sunday afternoon snack. I remember my grandma used to make these on Saturday mornings for when we were done with our chores.

This isn’t a “best oatmeal cookie recipe” per se… but I think you’ll enjoy these.

I love these with the oatmeal in them because of, well… the subtle oatmeal taste along with the banana. You can even substitute whole wheat flour instead of white flour and they’re still really good!

If you have an alternate recipe for this or a good variation… please post it in the comments below…

Banana Oatmeal Muffin Recipe

1/2 Cup sugar

1/2 Cup butter

2 eggs

2 mashed up bananas, about 1 cup

3/4 Cup honey

1/4 Cup milk

1 3/4 Cup flour

1 tsp. baking soda

1 tsp. baking powder

1 Cup oatmeal

1 Cup raisins (optional)

1/2 Cup chopped walnuts (optional)

Directions:

Cream the sugar and butter and then add the eggs, honey, bananas, and the milk.

Then stir in the dry ingredients, everything except the raisins and walnuts.. fold them in after you’ve mixed everything else.

Put into muffin tins and bake @375 for 20 minutes. It makes about 18 muffins.
